Dakgalbi’s story starts back in the 1960s, after a tough war in Korea. In the city of Chuncheon, things were rough, and people couldn’t afford expensive cuts of meat. So, clever cooks started using chicken, which was much cheaper. This is how Dakgalbi, this delicious dish we know today, was born!
Back then, Dakgalbi was actually cooked on a grill, not stir-fried like it usually is now. You can even find some restaurants in Chuncheon that still make it the old way!
Chuncheon Dakgalbi
Historically, dakgalbi was cooked over charcoal and not stir-fried. You can still find some restaurants in Chuncheon that use this traditional method of cooking.
As teppanyaki gained popularity in Korea, Dakgalbi embraced this new cooking style. This opened the door for adding various vegetables to the dish. The 1990s saw the dish take on its familiar form, loaded with cabbage. This addition not only made it more affordable but also easier to eat with the boneless chicken.
While there’s something to be said about the charcoal grilled chicken, the convenience of making it in a stir fry format has made it a household dish.
